what i ate wednesday
Wednesday again, which means it’s time for another What I Ate Wednesday! Thanks to Jenn of Peas & Crayons for hosting this fun link up!
Breakfast #1
Yes, this is just my first breakfast. With our schedule so busy in the morning, I need to eat something substantial before I go run/workout, but I can’t eat too much, as I learned last week as I felt my breakfast starting to come up on my run. Blech. So, I had a “lightened up” smoothie as a pre-workout/first breakfast.
- 1/2 banana
- 1/4 cup frozen pineapple
- 1/4 cup frozen peaches
- 1/2 scoop vanilla protein powder
- 1/2 tablespoon chia seeds
- handful spinach
- 3/4 cup vanilla soymilk
Workout
Most mornings, we go to our summer running group. But, since Matt had a dentist appointment, MacKenna + I went to the gym instead so I could go run and get in some strength training. I had a great run on the treadmill, incorporating in some speed work along with some hills. It left me tired + sweaty, but feeling totally accomplished.
I had about 15 minutes before I needed to go get Mac out of the gym daycare (babies under 1 can only stay for an hour), so I decided to get in my strength training that I missed on Monday. I did a few plyometric supersets – squat jumps, side skaters, and split squat jumps followed by the same exercises with weights. Killer. I’ll be sore for a few days, I’m sure.
Breakfast #2
I “ate” this mug of Honey Nut Cheerios with blueberries + soymilk in the car on the way to swimming lessons.
Lunch
MacKenna does most of the work in swimming lessons, but man, does it still leave me starving afterward! I had some leftovers from the night before: quinoa, roasted veggies, crispy tofu, tomatoes, and Catalina dressing.
And some Chobani with chocolate chips for a lunchtime dessert.
Snack
I love this combo! Goldfish crackers + salted peanuts. Tastes just like those cheddar peanut butter crackers. Yum!
I found Biscoff Crunchy spread at World Market the other day. Unfortunately, I am having some difficulty keeping the spoon out of the jar. I may just gain all the baby weight I worked so hard to lose back because of this little jar. I would not call 2 spoonfuls of this “sensible snacking”, but at least I stopped after 2 spoonfuls…
Dinner
PIZZA NIGHT! Best night of the week! Matt makes the dough from scratch and tops it with pretty much whatever is in the fridge at the time. Last night, our pizza included marinara sauce, broccoli, yellow peppers, tofu (Matt had chicken), provel cheese (which is a St. Louis thing), and mozzarella. Soooooo good!
Dessert
Nightly ritual = ice cream! I finished off the rest of my homemade ice cream from last week and topped it with chocolate chips and a Lofthouse frosted sugar cookie.
I might have gone back and had another half sugar cookie too…
MacKenna’s Eats
