the perfect summer dip
I used to hate coconut. Something about the texture really turned me off to it. Unless it was in chocolate. Because of course, chocolate makes everything taste better!
But, then I started reading healthy living and food blogs. I was particularly drawn to these blogs because they had a way of making healthy food more interesting and fun. One of the things I saw several of my favorite bloggers do was sprinkle coconut on the top of their daily bowl of oats.
At the time, I was an oatmeal-o-holic (before I realized smoothies made my tummy feel so much better). I would try new or different combinations every single day, but coconut had never even crossed my mind. Of course, I was not a big fan of it, but I am willing to give any food a shot.
And, oh my gosh, was it good! That’s when I started loving coconut and seeking out recipes that contained it.
And when it comes to coconut, nothing beats the creamy texture of coconut flavored yogurt. Recently, the awesome folks at Yoplait recently sent me a CASE of their brand new coconut Greek Yogurt. I’ve said my praises about their Greek yogurt before and the coconut is just as good. Smooth and creamy with a slight hint of coconut and a little coconut “pulp” for some added texture! It has become one of my favorites for topping a big bowl of berries.
But, I wanted to try something new with all my coconut Greek yogurt. With the 4th of July last week, I wanted to bring something light and summery to our family get together. Dips always go over well, so I knew that’s what I wanted to do with the coconut Greek yogurt.
When I think of summer, I think of laying out at the beach with a daiquiri in hand, getting my tan on. My drink of choice – a delicious pina colada. So, why not pair those same flavors in a delicious Greek yogurt dip?!
Pina Colada Greek Yogurt Dip
2 16-ounce containers Yoplait Coconut Greek Yogurt
1 15-ounce can crushed pineapple
2 tablespoons coconut flakes
1-2 tablespoons coconut rum (optional)
Combine all ingredients in a bowl. Sprinkle a little bit of coconut flakes on top for presentation. Serve with fresh fruit (great with strawberries!) and graham crackers.
(Note: I’ve had the dip both with and without the rum. If you are serving this with kids around or people who don’t drink, leave out the alcohol – you won’t miss it too much; it just has less of a daiquiri flavor.)
Or, if you’re feeling really outrageous, pour the dip into popsicle molds and freeze to make some delicious (boozy) popsicles! YUM!
This is probably one of the best dips I’ve made and it was a hit with my family! Even my mom who is a coconut AND Greek yogurt hater enjoyed the dip. A perfect dip to take to all your summer parties or if you’re lounging around at the pool.
And the best part? Eating all the leftovers with nothing but a spoon. Mmmmm…
