chocolate chip cookie green smoothie

Today marks the beginning of the last week of school for me.  Only 4 days stand between me + a summer spent with my Kenna Girl.  To say I’m excited is an understatement… I. Can’t. Freaking. Wait!

This will also be the longest week of probably the quickest 5 months of my life.  This school year has seriously flown by.  Matt + I were reminiscing on this past semester of school this weekend.  We went back to work in August, had a baby in October, I spent 3 months on maternity leave, returned back to work in January, and now, as quickly as it all happened, we are at the end of the school year. 

It’s hard to believe that Matt’s been taking MacKenna to the babysitter’s house every morning since January 3rd or that we’ve religiously drank (mostly) green smoothies every morning for breakfast since then as well.  It’s even harder to believe that I just discovered this gem of a smoothie last week in the 5 months we’ve been drinking them…

Chocolate Chip Cookie Green Smoothie
Serves 1.  Adapted from this recipe.

  • 1/4 cup plain yogurt
  • 1/4 cup rolled oats, uncooked
  • 1/2 tablespoon chia seeds
  • 1/2 scoop vanilla protein powder (chocolate would work also)
  • 1 banana (frozen or not, your choice)
  • 1 1/2 tablespoons Blue Diamond whole natural almonds
  • 1/2 tablespoon mini chocolate chips
  • 1 handful raw spinach
  • 1/2 cup Blue Diamond unsweetened vanilla almond milk
  • Ice cubes, as needed (optional)

Place all the ingredients into a blender and blend until smooth.  Enjoy!

This smoothie reminds me of the milk shakes my parents used to make us on Friday nights when we would watch the TGIF lineup of shows on TV.  We always had a huge gallon of chocolate chip ice cream in our freezer and my parents would add milk and chocolate syrup for my absolute favorite milkshake ever.  This smoothie is so rich and decadent you wouldn’t even realize it’s actually good for you!

It’s hard to believe that I won’t be making smoothies for us every morning for the next few months.  However, I know that after some hot + humid morning runs this summer, I will definitely be craving one of these!
